Now that fall is winding down and winter is rapidly approaching those pumpkins can come inside and have a second life in pie form. You will need to roast the pumpkin and then puree it or use canned.

What You’ll Need

For the Filling

  • 15 oz pumpkin puree

  • 1 can of eagle brand condensed milk

  • 1 1/2 teaspoon cinnamon

  • 1/2 teaspoon of ginger

  • 1/8 teaspoon of nutmeg

  • 3 large eggs

For the Pie Crust Follow the recipe listed in our peach pie recipe here https://greenwood-farms.com/food-drink/2020/8/27/autumn-peach-pie

What to Do

  1. Preheat oven to 425

  2. Line pie plate with unbaked crust

  3. Mix all filling ingredients in a bowl and pour into unbaked pie crust

  4. Decorate edges how you wish

  5. Place the pie into the oven and cook for 20 min

  6. After 20 min lower temperature on the oven to 350 and cook for an additional 30 min. To confirm that it has set insert a knife into the pie and remove. If it comes back clean it is done.
